BAKED PUMPKIN OR WINTER SQUASH
1 small pumpkin OR squash, 3 to 6 lbs.
1 cup water
1 to 2 Tbs. butter or margarine
or oil
Salt and freshly ground black
pepper to taste

Preheat oven to 400 degrees. Cut pumpkin or squash in half lengthwise. Scoop out seeds and stringy fibers down to flesh. Cut halves into
pieces between 3/4 and 1 1/2 lbs. per piece. Place pumpkin/squash pieces in lightly oiled 9 by 13 inch baking pan, skin side down. Pour in water. Cover tightly with foil. Baked until pumpkin/squash flesh tests uniformly tender when fork is inserted, about 1 hour. Remove from oven. Brush cut pieces with butter, etc. Season with salt and pepper. Return to oven until lightly browned, about 15 min. Makes 4 to 8 servings.
To microwave: Cook pieces, skin side down in baking dish with 1/2 cup water, covered, for about 15 min.
