PENNY'S STRAWBERRY PIEPenny Lind-Englund 1- ready-made pie crust, baked and cooled. Glaze: 1 c. mashed berries, 1 C. sugar, 3 T. cornstarch, 1/2 C. water Combine and cook ingredients over medium heat until mixture thickens and boils, stirring constantly. Boil and stir 1 minute. Cool. Cream Cheese Filling: 1 -8 oz. pkg. cream cheese, 1 t. vanilla 1/2 C. of the strawberry glaze. Beat together until smooth. Add 2 - 3 cups halved strawberries to remaining cooled glaze. Assemble Pie: In cool pie crust, spread strawberry cream cheese on bottom, top with the strawberries in glaze. Cool for 1 hour. Top with whipped cream. |
