STRAWBERRY MUFFINS
6 T butter, 3/4 C sugar, 2 eggs, 1/2 C milk
Cream butter and sugar. Mix in eggs one at a time, add the milk.
Add 14 strawberries, mashed up, mix well.
In another bowl combine:
2C flour, 1/4 tsp. salt, 1 T baking powder.
Add to berry mixture. Stir with wooden spoon until all the white disappears.
Drop the batter from tablespoons into paper lined muffin pan, fill cups halfway. Add a 1/2 tsp. strawberry jam to each muffin. Then spoon more batter to fill cups 3/4 full. Bake 20- 25 min at 350.
